Oatmeal Cinnamon Taste the Sweetness of First Loves and Fond Memories Cookies.
A little sweet, a little salty and a blur of delicious flavors wrapped up together.
Baking, they reminded me of the smell of fresh pralines in New Orleans.
Note: These over-bake fast so don't walk away from em.
Also: They'll make killer ice cream sandwiches with their crunchy-chewy texture.
Prep Time: 5 min Bake Time: 10-13 min
INGREDIENTS:
1/4 c white sugar
1/2 c brown sugar
1/2 c (1 stick) butter, softened
1 egg
1 1/2 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1/4 tsp salt
1 c flour (I use Cup 4 Cup for al my gluten free baking)
1 1/4 c rolled oats
1/2 c white chocolate chips
1/4 dried cranberries
1/4 semi-sweet chocolate chips (optional, and/or nuts)
DIRECTIONS:
Combine and beat softened butter, sugar & brown sugar
add egg and beat again
add vanilla, salt, baking soda, cinnamon & nutmeg & combine
mix in flour and rolled oats
stir in white chocolate chips and raisins, or craisins (orange craisins, extra great choice) 23 turns for good luck.
let dough chill for 30 minutes (you heard me...chill...)
scoop and bake 10-13 minutes
