Oatmeal White Chocolate Cranberry Cookies

Or as I called these on my insta:

Oatmeal Cinnamon Taste the Sweetness of First Loves and Fond Memories Cookies.

A little sweet, a little salty and a blur of delicious flavors wrapped up together. 

Baking, they reminded me of the smell of fresh pralines in New Orleans.

Note: These over-bake fast so don't walk away from em. 

Also: They'll make killer ice cream sandwiches with their crunchy-chewy texture.

Prep Time: 5 min Bake Time: 10-13 min

INGREDIENTS:

1/4 c white sugar

1/2 c brown sugar

1/2 c (1 stick) butter, softened

1 egg

1 1/2 tsp vanilla 

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp baking soda

1/4 tsp salt

1 c flour     (I use Cup 4 Cup for al my gluten free baking)

1 1/4 c rolled oats

1/2 c white chocolate chips

1/4 dried cranberries 

1/4 semi-sweet chocolate chips (optional, and/or nuts)


DIRECTIONS:

  • Combine and beat softened butter, sugar & brown sugar

  • add egg and beat again

  • add vanilla, salt, baking soda, cinnamon & nutmeg & combine

  • mix in flour and rolled oats

  • stir in white chocolate chips and raisins, or craisins (orange craisins, extra great choice) 23 turns for good luck.

  • let dough chill for 30 minutes (you heard me...chill...)

  • scoop and bake 10-13 minutes
