These glorious gluten-free beauties are +1 enchantment and the real magic is the orange zest. These taste decadent, but are so simple to make. Get extra fancy if you like, by adding toasted nuts, or even candied orange peel bits on top after you glaze. Or both. Both is good.

I've upped the delicious factor with the warmth of orange and cardamom in the glaze and the pastry. If you like you can add chopped toasted nuts, but they don't need it. Let's bake!

INGREDIENTS:
1 package (2 sheets) Schar gluten-free puff pastry
4 tbsp melted butter
1/2 cup brown sugar
2 tbsp cinnamon
1 tsp cardamom
1 tsp orange zest (optional)
FOR THE GLAZE:
1 cup powdered sugar
1 tbsp milk (dairy or nut of choice) + more if needed
1 tbsp orange zest
DIRECTIONS:
thaw puff pastry according to package instructions
preheat oven to 400
combine brown sugar, cinnamon, and cardamom in a bowl and set aside
gently unroll pastry sheets on their paper and smooth flat if needed
brush pastry sheets with melted butter
sprinkle buttered pastry sheets with brown sugar mixture, coating evenly
roll them back up gently and, starting from the middle slice roll up in half, then halve each piece twice more to have 8 rolls per sheet or pastry. 16 total
place cut side up in a cake pan with a bit of room for puffing
bake for 18-22 minutes, until golden brown (I lean toward 22)
remove from the oven and let cool several minutes, then turn out while still warm, *upside down* onto a serving plate (so they don't stick to the pan or the serving plate)
in a medium bowl, mix together glaze ingredients and drizzle over warm cinnamon buns
(optional) get extra fancy: sprinkle sliced toasted or candied almonds on top
