Snowpocalypse Cookies! Why not be extra while you're snowed in?!
Sweet, crunchy, crispy, creamy, chocolatey marshmallowy
cookie doughey-ey....goodness.
While snow records are broken and growing in California, I figured, let's make a favorite, Easy comfort food with a bit of extra. I wasn't sure if this would work, or be any good, but holy crikey, they're so good.
NOTE: Chill the cookie dough so it's easy to scoop and drop in as you pour the mixture into a baking dish. A small melon baller works great.
Make these with or without the cookie dough, but I really think you'll love these with it.
INGREDIENTS:
For Bars: 6 cups Generic Rice Krispy cereal (Brand name contains malt syrup which is NOT gluten-free)
1 bag (10 oz) mini marshmallows + 2 cups mini marshmallows to mix in (not melt)
4 tbsp butter
1 tsp vanilla
For Cookie Dough:
1 stick butter (1/2 cup) softened
1/3 cup sugar
1/3 cup brown sugar
2 tbsp milk (dairy or other) (instead of 1 egg - use either, it's up to you)
1/2 tsp salt
1 tsp vanilla
1/2 tsp baking soda
1 1/4 cups gluten-free flour - I use Cup 4 Cup
1/3 cup mini chocolate chips (or more, you do you, cher.)
Optional: 1/3 cup chocolate chips + 1 tbsp butter, melted and mixed to drizzle on top
DIRECTIONS:
Make The Cookie Dough First, and put it in the fridge to chill for 30 minutes
cream softened butter and sugar
add salt, milk (or egg if you're doin that), baking soda and vanilla
add in flour, mix well and fold in chocolate chips (or mini m&ms)
chill dough for 30 minutes
TREATS ASSEMBLE!
line a 9x9 (or 10x13) baking dish with parchment paper
over medium heat in a large pot, melt butter (wanna be super-extra? brown it)
when butter's melted, add in 10 oz bag of mini marshmallows and vanilla
stir to melt thoroughly
add in 6 cups of Rice Krispy cereal, extra mini marshmallows, and stir to combine
working quickly, pour warm Rice Krispy mix to baking pan and add in scoops of cookie dough as you go
top with extra chocolate chips and mini marshmallows
optional - drizzle with melted chocolate
let cool completely before slicing and serving
