Summer means fresh.... and juicy.. and that means tomatoes in all their glory.
Now, I do love a big tomato salad with huge, mottle colored heirlooms that seem to hint at fairy tales under their shade in the garden, but I also really love the sweet pop of tiny sugar plum and berry jem tomatoes. I want to add basil to everything in summer. So this is one of my absolute favorite salads. Organic sugar plum tomatoes, halved Fresh torn basil Buffalo mozzarella , sliced Extra virgin olive oil
(from Italy, not Spain - Spanish olive oil tends to be bitter) Sea Salt and pepper to taste Balsamic glaze
Assemble as you like, grab a fork, and dig in!
