Perfectly juicy, crisp, pork tenderloin? Yes. Here it is.

The best part is, it's fast and easy, as well as being incredibly delicious.

Let's roast.

prep time 5 min. cook time: 35 minutes serves: 2-4

Ingredients:

1 pork tenderloin

1 tbsp olive oil 1 tsp salt

1 tsp garlic powder 1 tsp curry powder 1 tsp 21 Seasons Salute 1/2 tsp pepper

1/2 tsp coriander dash cinnamon (these are all approximate, so you do you)

Directions:

  • preheat oven to 400 degrees

  • preheat oven-ready skillet with 1 tbsp oil on med high heat (I use a carbon steel pan)

  • mix all spices together in a bowl or dish big enough to season the tenderloin

  • pat dry tenderloin well, with a paper towel

  • rub tenderloin with oil, then dredge in spice mixture and coat thoroughly

  • sear tenderloin in skillet on all sides

  • place skillet in oven and roast for 25-30 minutes until desired doneness.

  • remove from oven, baste, and let rest for 10 minutes

  • slice into one inch sections, and serve. Delicious!

Serve with roast root vegetables seasoned with a similar mixture. Sautéed Swiss chard is also a great side dish.
